So, whenever I click on "ADDRESSES", it pops up with 30 different BTC addresses, and mine happens to be the second one on the list. Why do I see 30 instead of just my own?

I assume you're talking about Electrum, and I have good news for you: those 30 different Bitcoin addresses are all yours!
You may want to read up on why to "avoid address reuse" (TL;DR: it's good for privacy and keeping track of payments).

That's a common misunderstanding. A Bitcoin address is not like a street or email address. It is more like invoice number. It is not intended to be used as an ID.
Bitcoin addresses are intended to be used only once. Your wallet has a nearly unlimited number of them for you to use.
Note that altcoins may use address differently.
Why not tell us first what wallet you are currently using?
Like LoyceV said, if it's Electrum, all of these addresses are yours, but weirdly, you have 30 addresses. The default amount of addresses for an Electrum wallet has 20 unused addresses, but if all these addresses are used, the wallet will derive a new address from the wallet.
So you might be talking about other wallets?
By default, electrum displays 30 unused addresses in "Addresses" tab. It contains 20 receiving addresses and 10 change addresses.
To OP:
As already stated by LoyceV, all addresses displayed there are yours. I just want to add that every time you create a new request in "Receive" tab, electrum gives you a new address.
Go to "Receive" tab and click on "Create request". This time, electrum will give the third address.
