I just updated to the latest AppImage version of Electrum on Linux (was a few versions behind), and now I can't find the "Transaction" tab in "Preferences". This tab is where you could adjust the "replace by fee" option, and without it, I can't figure out how to toggle this feature. There were also other settings in that "Transactions" section that seem to be missing now. Maybe I’m just not up to speed with the new defaults, but I’m really hoping someone can help me out.

You cant find the transaction tab in preferences even in view settings you can't find it because it never existed what you looking for is the history tab there is no way to enable or disable this tab because its enabled by default. That is where you can find the transaction under the history tab and by clicking or right-clicking the transaction that is where you can find the "replace by fee". If I'm wrong why not take a screenshot of your current wallet and let's see why you can't find all transactions?

"Transactions" tab no longer exists in "Preferences". That has been removed. The option to enable and disable RBF has been removed since the version 4.4.0 of electrum and all transactions are automatically flagged as RBF. Instead, there's a setting button in the window that pops up after clicking on "pay" button. See the image below.

Thanks, hosseinimr93 . "has been removed since the version 4.4.0"   Yes, I was using v. 4.3.2.  Appreciate the help! I'd insert an image of how "Preferences" used to be with the "Transactions" tab, for the other poster, but I don't know how to insert my jpg here -- maybe I'd have to save it to a web address first (?)

Yes, and here's how to: http://bitcointalk.org/index.php?action=help;page=post#references:~:text=%5Bimg%5D%0Ahttp%3A//somesite/image.gif%0A%5B/img%5D But your inserted images will be converted to links (for now) because it will not be displayed if posted by a non-copper member newbie account. It'll be displayed once you reached junior member rank. Here's a screenshot from Electrum v4.2.2:
